Why my Lamb Rub?

I have had the honor of living in many culinary "hot spots" around the world; Turkey being one of them. Every Turkish household has a traditional family rub that is passed down from generation to generation. It is used for just about everything: From meat, poultry to vegetables, dips, sauces, oils, and salad dressings.

My Lamb Rub is an interpretation of culinary-time spent with Turkish friends and acquaintances during my years in Istanbul, Ankara and Adana. A toast to the Orient!

​Dry marinade with the Lamb Rub

Provide a great amount of Lamb Rub on all sides of your meat (without additional salt). I recommend to leave the rub on your meat to infuse for at least 2 hours before preparation. I suggest overnight in your refrigerator for best results, but that’s optional.

The Lamb Rub contains only a small amount of salt. After your rub has finished the infusion period, but before you start to cook your dish, you will need to salt to taste.

Notes about salting:

  • Do not add salt to your meat during the infusion process as this can dehydrate meat if left on for hours.
  • If you plan to cook immediately you can salt and spice with Lamb Rub simultaneously.

Wet rub (quick marinade)

You can also intensify your results by creating a “wet rub” glaze, using your Lamb Rub.

Ingredients for 1.5 kg meat:

3 tbs.Lamb Rub
2 tbs.sesame seeds oil
1 tbs.Worcestershire sauce
1 tbs.honey
1 tbs.orange juice (alternatively: lemon juice or balsamic vinegar)

Tip: If you want to add some hotness to your wet rub, you can also add 1 tbs. of Louisiana Hot!

Tangy yogurt dip

Tangy yogurt sauce with Moore than Spice Lamb Rub

Mix the ingredients in a bowl to quickly create a tasty dip.

1 heaped tbs.Lamb Rub
 juice from ½ lemon
 fresh herbs, finely chopped (if desired)
 a pinch of salt
