Mirepoix is the essential foundation for all your soups, sauces, and stocks.
According to Birtie, “it’s the secret ingredient; the reason your food taste good". I consider it to be the key for adding that extra something to a dish.
With Moore than Spice Mirepoix, I’ve eliminated the tedious task of chopping all the vegetables, plus I’ve added complementary herbs and spices to jump-start your preparation.

For bone broths, brown your bones in the desired cooking vessel with a small amount of oil. Once a good amount of caramelization has been reached, add your Mirepoix as desired and continue to simmer another minute or two.
Add just a half-cup or so of liquid to deglaze the pot. During this procedure, you can use a wooden spoon to gently dislodge any bits of caramelized pieces stuck to the bottom of the pot. You want these flavorful morsels to blend in with the other flavors.
Pour in the remaining liquid. Slow cook as your recipe requires.
